My Journey to Health – Unislim

So if you haven’t read ‘My Journey to Health – Yoga’ I suggest that you do as this will bring this next stage in context.

I moved out of home last year and moved in with the other half. Seen I finish work before him it now became my duty to cook the dinner. THE DREAD! I never had to cook dinner, the other half is so much better. So I knew I could put on ready meals etc do unhealthy food. This was not what I wanted – I wanted healthy but tasty food. So I decided to join Unislim in Naas. This would kill two birds with one stone. I would become healthy and would also learn to cook.

AnnieAnnmarie is our class rep! She is realistic and down to earth! I can’t praise her enough she so understands with making changes to your life for the better and that we are working people with other commitments to our lives. She helps you in every way she can. Her Facebook page gives inspiring ideas in what to eat and every Friday I get an inspiring text message to keep you motivated.

Life is for living and Unislim doesn’t stop that! I have never felt that I have sacrificed my food! I am able to eat what I want! For example I want a pizza and yes this is a high calorie really not healthy dinner/lunch, so I have a fakeaway pizza. All within plan and still get to eat what I want – Check out some of my Food Reviews under ‘Unislim’ to get some delicious ideas.

My Journey to Health

Hi All,

This is going to be short and sweet.

I am going to give you a road map of My Journey to Health.

Due to my back difficulties (I won’t be going into detail) I found that I wasn’t able to be as active as I had once been. This led to a lack of fitness and bad habits.

I since had back surgery and due to this eye opening event in my life, I took a new outlook to life and started a new journey.

I will be posting up blogs on the changes I made to my life.

Creamy Cocunut Curry

What you need:

  1. Chicken breasts diced
  2. Broccoli
  3. Carrots
  4. Mushrooms
  5. Peppers
  6. Curry Powder
  7. Coconut Oil
  8. Fry Lite
  9. Alpro Coconut Yogurt
  10. Chilli Flakes
  11. Garlic
  12. Basmati Rice

The how:

  1. Heat your wok and add some coconut oil
  2. Add the Chicken pieces
  3. Chop up your vegetables, I used broccoli, carrots, mushrooms and peppers but you can use what you want
  4. When Chicken pieces cooked, remove from Wok into a bowl
  5. Add your vegetables to the wok with some Fry Lite
  6. Add your garlic and chilli flakes
  7. Boil some water for your rice
  8. When cooked add chicken back into wok
  9. Pour approx. half a tub of Alpro Coconut Yogurt into Wok
  10. Add approx. 2 tbps of Curry Powder
  11. Stir until all vegetables and chicken are evenly covered
  12. Add Rice into boiling water
  13. Simmer for 5-10 mins
  14. Strain Rice and serve

Healthy Bars

When it comes to healthy I am not one to eat food that lacks taste including my treat food.

But I understand to eat healthy you are required to try alternatives.

My recommendations are;
•Crownfield Muesli Bars (from Lidl)
•Fibre One (can be purchased in any normal supermarket)
•Harverst Morn Benefit bars (from Aldi)

The Crownfield and Benefit bars are much the same as they are both a crap bar but get you over that sweet craving.

The Fibre one bars are like little cake packages. I honestly don’t feel like these are healthy but sinful as in a REAL GOOD TREAT. They just look so yummy too!

Easy Stir Fry

The so easy to make Stir Fry.

What you need:
•Prawns
•Smokey Bacon
• Onions
•Peppers
•Broccoli
•Mushrooms
•Carrots
•1 tsp Smoked Paprika
•2 tbsp of almond and cocunut soya milk
•Fish stock
•1 tsp Garam masla
•Spinach
• Tomato puree

The how:
•Chop up your onions, carrots, peppers, mushrooms
•Add to heated wok with Spray lite
•Add all spices as detailed above
•Add some tomato puree
•Add the fish stock to some hot water and pour in
•Cook bacon separately and then cut them up and add to Wok
• Add prawns
•Stir well
•Lastly add the broccoli to the wok (leave on top)
•Then simmer for 5-10 mins

Serve with pasta, rice or noodles and some yummy fake garlic bread.

Fakeaway Chicken Balti

The things you need:
•Chicken diced
•Peas
•Onions
•Pasasta
•2 tsp Curry powder
•1 tsp of Garam masla
•1 tsp paprika
•1 tsp ginger
•Spray Lite

The how:
•Spray your wok with Spray lite
•Pour in your diced chicken and cook
•Add your onions
•Add your pasasta
•Add your spices as listed above
• Finally add your peas
• Simmer for 5-10 mins

Serve with rice and enjoy!

Classic Chicken Curry

Nothing better than a Classic Chicken Curry.

Things you need:
•Chicken pieces or diced breasts
•Peas
•Onions
•Curry powder
•Chicken Stock
•Corn Flour (if required)
•Spray Light

The how:
•Spray some spray light into a wok
•Pour your chicken pieces in and cook
•Add your chicken stock to hot water, stir well
•Chop your onions and add them to wok
•Pour stock in
•Add Curry powder (1tbsp)
•Mix corn flour separately in a glass/cup with water
•Add peas
•Simmer for 5-10 mins

Serve with rice/egg fried rice or chips or both.

Omlette

Omlette’s have to be the easiest thing to cook. They are so nutritious and delicious. I think it’s a dinner or a lunch that had no limits- you can add whatever you want to it (well once you have eggs).

Here’s how I make mine.

Stuff you need:
•Eggs
•Fry light
•Onions
•Ham/Bacon
•Tomatoes
•Cheese
•Mushrooms
•Peppers
•Salt & Pepper
•Milk (optional)

The how:
•Heat up your frying pan and spray with some fry light.
•If you are having bacon in your omelette cook these first.
•Crack 2 eggs (per person) into a bowl and whisk.
•Chop up your onions, tomatoes, peppers & mushrooms – add to whisked eggs
•Slice up your ham/Bacon -add to whisked eggs
• I add a drop of milk into the mixture (this is optional)
• Add some salt and pepper
• Pour your mixture onto your hot pan
•The edges of the omelette will start to show they are cooked but your middle will still be egg-y, I tureen on the grill at this stage.
•Add your cheese (30g per person)
•Put your pan under the grill and your omelette will now start cooking on the top and melt your cheese.

Pancakes anyone?

With pancake Tuesday only around the corner, how well you be making yours?

Here’s my healthy but delicious option.

The stuff you need:
• Porridge Oats
• Egg
• 1 tsp of Nutella
• Milk

The how:
• Add your oats into a blender (to give you a flour texture)
•Mix your egg in
•A drop of milk
•Then add tsp of Nutella to give you a chocolate taste, you could use peanut butter instead or you could add a bannana or nothing.

Pour or scoop onto a hot pan and cook your amazing pancakes.

I suggest serve with some fruit and/or natural yougart.

Courgette Noodles

So when I saw this unique contraption in how to make courgette noodles I thought to myself I wine what they taste like.

So off I went and cut my courgette finely before deciding to make a purchase on Pigsback.

Things you need:
•Courgettes
•Garam Masla
•Garlic paste
•Tomatoe puree
•Light soya
•Carrots
•Onions
•Fry light
•Prawns
•Chilli

What to do:
•Thinly slice courgettes and put into a pot of water
•Bring to the boil in hot water
•Cook your prawns in a wok
•Add garlic paste, chilli & soya sauce
•Chop up your vegetables
•Add vegetables to prawns
•Add some Garam Masla
•Drain of courgettes and add to the wok
•Mix thoroughly and serve
